I’ll Keep Cooking With Butter, Thanks
I meant to link yesterday to Diet and Fat: A Severe Case of Mistaken Consensus in the NY Times, which seems to have been on a roll of publishing great pieces like this lately. Next thing you know they’ll be questioning the global warming cascade, and asking questions like why ice appears to be melting in the arctic region, but not the antarctic, and why people therefore focus only on the former in their alarmism. But I digress.
Yep. Fat is good for you. Not necessarily a whole lot of animal fat (unless it’s natural, no hormones, grass fed), but the good fats like organic (grass-fed) butter (cow and goat), EV coconut oil (massively expensive, though), EV palm oil (also massively expensive), and EV olive oil, avocados, etc. Anything that’s partially hydrogenated is bad, and our modern vegetable oils (including canola and corn) aren’t good.
I’ve been reading a book about all of this and it makes complete sense. They’re finding more and more that (good and natural) saturated fat is not the big killer. Very little of the fat that comes out of clogged arteries is actually the good saturated fat. We need (good) cholesterol to grease our veins a little. Etc etc.
And we need lots of contact with dirt and lots of exercise.
