Finally getting around to this cooking post thingy now that I’ve got the picture of the result.
That’s black beans over brown rice over corn, topped with chicken, topped with a little jack and cheddar and sour cream. Otherwise known as heaven in a bowl.
The black beans are easier than they sound, even though I use dried beans (1. dirt cheap, 2. not so freaking salty). I quick soak ‘em (boil a couple of minutes in 4x their volume of water, let sit an hour, pour off liquid), cook ‘em (an hour or so in 3x water), and then dress ‘em up all pretty in spices and such. Garlic, onion, and pepper sauteed in a bit of olive oil, plus cumin, oregano, red pepper, black pepper, and at the very end just a bit of salt and a tomato. Unreal in their goodness. Usually eaten as the sole protein but I was in the mood for chicken, so I just did that in the same pan I’d had the garlic and such in, spiced it similarly, and it was delicious.
This is the one that made me admit I could cook after all. I’ll happily have an identity crisis for food this good, though.
